Beet Relish with Horseradish

I was stunned by how delicious this is. Stunned! I am not a fan of red beets but I will eat this by the spoonful. So good on polish dogs or chicken. 

We are honored that this took Double Gold at the Sonoma County Harvest Fair two years in a row!
